UNDERSTANDING FOOD LABELS

A health-sounding label does not necessarily mean a healthier product.

Food packaging contains both regulated information and marketing claims. Terms that sound similar can have very different standards behind them.

WHAT COMMON LABELS ACTUALLY MEAN

USDA ORGANIC
A regulated federal certification. Certified operations must follow USDA organic production and handling requirements, including restrictions on most synthetic pesticides and fertilizers, genetic engineering, sewage sludge, and irradiation. Organic does not mean pesticide-free or automatically more nutritious.

NATURAL
This is not another word for organic. FDA has generally interpreted “natural” to mean that nothing artificial or synthetic that would not normally be expected has been added to the food. It does not establish standards for farming methods, pesticide use, animal welfare, or nutritional quality.

NON-GMO / BIOENGINEERED
These terms concern genetic engineering—not the overall health or environmental quality of a food. Non-GMO does not mean organic, pesticide-free, locally grown, or more nutritious.

GRASS-FED
Refers primarily to what cattle consumed. By itself, it does not establish comprehensive standards for animal welfare, antibiotic use, organic production, or where the animal was raised.

CAGE-FREE EGGS
Hens are not confined to cages and must be able to move within their indoor housing. Cage-free does not mean the hens lived outdoors.

FREE-RANGE POULTRY
Requires some form of outdoor access under USDA labeling requirements. The claim alone does not tell you how large or vegetated that outdoor area was or how much time an individual animal actually spent outside.

PASTURE-RAISED
Do not assume this phrase alone guarantees one universal production system. Look for the standards behind the claim and credible third-party certification if animal-welfare conditions matter to you.

NO ADDED SUGAR
Means qualifying sugars or sugar-containing ingredients were not added during processing. It does not mean sugar-free. The product may naturally contain substantial amounts of sugar.

DATE LABELS ARE OFTEN MISUNDERSTOOD

For most foods, dates such as “Best By” are primarily indicators of expected quality—not automatic safety expiration dates.

Sell By primarily helps retailers manage inventory.

Use By is commonly a manufacturer's recommendation for peak quality.

Infant formula is an important exception: federal regulations require a use-by date.

Food can become unsafe before or after a printed quality date depending on contamination, temperature, storage, preparation, and the type of food.

THE NUTRITION FACTS PANEL MATTERS MORE THAN HEALTHY-LOOKING PACKAGING

Calories
Added Sugars
Sodium
Saturated Fat
Dietary Fiber
Protein
Ingredient List

Ingredients are generally listed in descending order by weight.

A package can say things like “natural,” “made with whole grains,” or “no added sugar” and still contain nutritional characteristics you may want to consider.

WHAT ARE THOSE INGREDIENTS?

A chemical-sounding name does not automatically mean an ingredient is dangerous. These are common manufactured or highly processed ingredients you may see on labels and what they actually do.

HIGH-FRUCTOSE CORN SYRUP
A corn-derived added sweetener containing glucose and fructose. Nutritionally, it is a source of added sugar.

MALTODEXTRIN
A rapidly digestible carbohydrate generally produced from starch. Used as a thickener, filler, carrier, or texture ingredient.

DEXTROSE
Another name for glucose. It is a simple sugar and may be used as a sweetener or for other food-processing purposes.

MODIFIED FOOD STARCH
Starch that has been physically, chemically, or enzymatically altered to change properties such as thickness, stability, or texture. “Modified” here does not mean genetically modified.

MONO- AND DIGLYCERIDES
Fat-derived emulsifiers that help ingredients such as oil and water remain mixed and can improve texture or shelf stability.

SOY LECITHIN
An emulsifier commonly derived from soy that helps ingredients mix and is widely used in chocolate, baked goods, and other processed foods.

XANTHAN GUM
A carbohydrate produced through bacterial fermentation. Used to thicken and stabilize foods.

CARRAGEENAN
A thickening and stabilizing ingredient derived from red seaweed and used in products such as dairy and plant-based beverages.

SODIUM NITRITE / SODIUM NITRATE
Curing agents used particularly in processed meats. They inhibit dangerous bacterial growth, contribute to color and flavor, and can participate in formation of N-nitroso compounds under some conditions. Processed-meat intake is associated with increased colorectal-cancer risk.

BHA / BHT
Synthetic antioxidants used in some foods to slow oxidation and rancidity.

TBHQ
A synthetic antioxidant used to prevent fats and oils from becoming rancid.

POTASSIUM SORBATE
A preservative used to inhibit molds and yeasts and extend shelf life.

SODIUM BENZOATE
A preservative commonly used in acidic foods and beverages to inhibit microbial growth.

ARTIFICIAL COLORS
Color additives used to change or standardize a food's appearance. FDA regulates approved color additives and their permitted uses.

“NATURAL FLAVORS”
A broad regulatory category for flavoring substances derived from specified natural sources. The term describes the source and function of the flavor, not whether the finished food is nutritious or minimally processed.

“ARTIFICIAL FLAVORS”
Flavoring substances that do not meet the regulatory definition of natural flavor. Their purpose is to provide flavor, not nutritional value.

ENRICHED FLOUR
Refined flour to which certain nutrients—such as iron and B vitamins—have been added back after processing. It is not the same as whole-grain flour.

WHAT SHOULD YOU ACTUALLY WORRY ABOUT?

Don't judge a food solely because an ingredient has a long chemical name.

A more useful approach is to look at the whole product and your overall diet:

How much added sugar does it contain?
How much sodium?
How much saturated fat?
How much fiber?
How heavily processed is it?
How often are you eating it?
What does it replace in your diet?

Some additives preserve food safety or prevent spoilage. Others provide color, texture, sweetness, or convenience.

“Synthetic” does not automatically mean harmful, and “natural” does not automatically mean safe or healthy.

THE SIMPLE RULE

Don't infer more from a label than the label actually proves.

A claim about one characteristic of a food is not evidence that the entire product is healthy, sustainable, humane, or environmentally preferable.
